I am a chef of 16 years, gardener of 2 years and creator of 34 years. I hail from the deep south and reside in the Big Apple. In the summer of 2011 I set out to start a company that will create an amazing line of new products all designed with utility in mind (hence the name tilit!). While I am not ready to share our products or ideas, I wanted to share the passions that shape what tilit will become. So if you are a food person, a plant person or just a maker of things, then please tune in, pass it along and enjoy. Additionally as the business grows closer to market I will share the action of the process.

Le Cocotte near the Eiffel Tower

Perhaps one of the best meals we’ve had this trip, definitely the richest! Tucked into a side street steps away from the Eiffel Tower is a mini empire run by Chef Christian Constance. Three restaurants with one on the higher end, one as the original bistro and the third, le Cocotte, a modern take on French comfort food. The bar stool seating in the simplified modern dining room sets the mood for a casual surprise. To start we had possibly the best country terrine to date, full of Liver and Pork and Duck and who knows what else. But it works! Garnished with pickled peppers and cornichons and served with toasted wheat baguette. For our entrees we ordered the cocotte du jour, a duck meat pie of sorts that was out of this world and the potatoes halved and stuffed with pig’s feet. Simply amazing, rich and strong comfort food that will be tough to beat….
